Pineapple Ingredients

  • 2 tbsp Cornstarch
  • 1 cup Water
  • ½ small diced pineapple
  • ¼ cup Brown sugar
  • ¼ cup Refined sugar
  • ½ tbsp Meta Mate Raw

Crumb Ingredients

  • ¾ cup Flour
  • ½ cup Refined sugar
  • ½ tsp Ground cinnamon
  • 1 tbsp Meta Mate Raw
  • ½ tsp Salt
  • ½ Cup Cold Butter


  1. Dissolve the starch in water and put it in a pan with the other ingredients.
  2. Bring to medium heat, stirring to boil, lower heat to minimum and cook, stirring occasionally for about 20 minutes or until the syrup is thick and well-cooked pineapple.
  3. Transfer to a bake oven and let cool well.
  4. Mix all dry ingredients.
  5. Chop the well-chilled butter into cubes and place it over the flour with the spices, use the ends of the fingers to mix by crumbling the butter with the flour to make afarofa with loose pellets.
  6. When incorporated and smooth, place crumbs over pineapple already cold.
  7. Preheat oven to 230ºC for 10 minutes, bake crumble for about 18 minutes or until the crumb is flushed
  8. Serve warm.
