Preheat oven to 350F / 176C
In a bowl, whisk together butter, brown sugar, cinnamon, nutmeg, salt, and brewed yerba mate. Add apples and toss to coat well. Transfer mixture to a small casserole dish.
Transfer casserole dish to the oven and bake 30-40 minutes until apples are tender.
In a large bowl, whisk eggs, milk, brewed yerba mate, flour, and butter until smooth.
Grease a skillet and set over medium-high heat. Scoop a scant 1/4 cup into the pan and swirl to spread evenly. Cook 30 seconds per side. Repeat until all batter is cooked.
Fill crepes with apples, roll, and dust with powdered sugar (optional).
